  • 500 g ripe tomatoes
  • 1 red pepper
  • ½ cucumber
  • ½ white onion
  • 1 clove of garlic
  • 5 cl of olive oil
  • 1 tbsp tomato paste
  • 2 cl of sherry vinegar
  • Salt and pepper

Recipe steps ( 15 min ):

  1. Using a peeler, peel the pepper. Then, remove the seeds and stem.
  2. Peel the cucumber and remove the seeds. Peel the onion and slice it, then peel the garlic as well.
  3. Place the tomatoes in a saucepan of boiling water. Leave them there until their skins split, then remove them and peel them under cold water.
  4. In a blender, add the previously prepared vegetables. Then add the tomato paste, oil, vinegar, and season with salt and pepper.
  5. Blend all ingredients until smooth and evenly combined.
  6. Refrigerate the gazpacho for about 2 hours to serve chilled.

  • 2 cod fillets
  • 1 zucchini
  • 1 carrot
  • 1 red pepper

Recipe steps ( 45 min ):

  1. Preheat the oven to 200°C.
  2. Wash and cut the zucchini, carrot, red pepper and red onion into julienne strips or small pieces.
  3. In a bowl, mix the lime juice, olive oil, salt and pepper to prepare the marinade.
  4. Place the cod fillets in the center of two large sheets of baking paper.
  5. Spread the chopped vegetables around the cod fillets.
  6. Sprinkle the marinade over the mixture.
  7. Close the papillotes by folding them and sealing them tightly.
  8. Place the parcels on a baking sheet and bake for about 15 to 20 minutes, until the fish is cooked and the vegetables are tender.
  9. Remove the parcels from the oven and serve directly on the parchment paper.

4 - Mango & Coconut Chia Pudding, the delicious detox recipe 🥭

This sweet recipe is made from healthy foods such as chia seeds rich in omega 3, mango rich in antioxidants and coconut water which aids digestion.

Ingredients ( 4 people ):

  • 40cl of coconut milk
  • 5 tbsp chia seeds
  • 2 tablespoons of maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 ripe mango, diced
  • 4 tablespoons of grated coconut

Recipe steps ( 10 min preparation, 4 hours or even overnight rest ):

  1. In a bowl, combine the chia seeds, coconut milk, maple syrup (or honey), and vanilla extract. Stir well to distribute the chia seeds evenly.
  2. Let the mixture sit for 5 minutes, then stir again to prevent the chia seeds from sticking together.
  3. Cover the bowl with plastic wrap and place it in the refrigerator. Let it sit for at least 4 hours, ideally overnight, to allow the mixture to thicken and take on a pudding-like consistency.
  4. Before serving, stir the pudding again to even out the texture. Divide it among 4 bowls or glasses.

Ingredients ( 4 people ):

  • 200 g of coral lentils
  • 1 medium potato
  • 2 eggs
  • 1 onion (red or yellow)
  • 2 cloves of garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 2 tbsp chickpea flour
  • 2 tbsp olive oil (for cooking)
  • Salt and pepper

Recipe steps ( 40 min ):

  1. Rinse the red lentils in cold water. Cook them in a saucepan of boiling water for about 10 to 15 minutes, until tender. Drain and let cool slightly.
  2. In a large bowl, combine the cooked red lentils, grated potato, chopped onion, crushed garlic, cumin, coriander, turmeric, salt, and pepper. Mix all ingredients well until smooth.
  3. Add the chickpea flour and lightly beaten eggs, then mix again to fully incorporate all the ingredients.
  4. Form the mixture into patties, using about 2 tablespoons of mixture per patty.
  5. In a skillet, heat the olive oil over medium heat. Cook the red lentil, potato, and egg patties for about 3 to 4 minutes per side, until golden brown and crispy.
  6. Remove the patties from the pan and place them on paper towels to remove excess oil.
  7. Serve warm with a fresh salad or mint yogurt sauce.
